Mediterranean Potato Salad

This recipe has changed since I posted it. Add green olives! Substitute tomatoes for the red pepper! Yum.
2 LB. potato
1 red pepper
1 cucumber (diced)
1/2 cup red onion (sliced)
8 oz. feta cheese (crumbled)
1 lime (squeezed)
1/2 cup olive oil vinagrette salad dressing
Bring a large pot of salted water to boil. Add potatoes and cook until tender but firm (about 15 minutes). Drain, cool and chop.
In a large bowl, combine the potatoes, red peppers, cucumbers, red onion and cheese.
Whisk together the lime juice, salad dressing, salt and pepper (amount of salt and pepper to taste). Pour over salad and toss to coat. Serve with pita if desired.
