Slow Cooker Chicken & Quinoa

quinoa-chicken-scIngredients
1½ cups black quinoa
2 cups fresh green beans, chopped
1.5 – 2 lbs chicken, cut in pieces
4 cups chicken broth
6-8 cloves garlic
salt
pepper
thyme
sage
marjoram

Before serving:
juice of 2 slices of lemon
fresh parsley
green onions
queso fresco

Combine the quinoa through marjoram in the slow cooker. Cook for 4 hours on low. Add the lemon juice, fresh parsley and stir. Top with queso fresco and/or green onions & serve.
