Gingerbread pancakes
I just bought a shiny red KitchenAid hand mixer so I used it to mix everything in this recipe, although that is probably neither necessary nor recommended. I think I overmixed. Nonetheless, the molasses, ginger and cloves can all be increased or decreased to your taste. Just be sure to maintain the same amount of liquid, so if you increase the molasses, reduce the milk.
2 c. flour
1 1/4 c. skim milk
1/2 c. molasses
2 t. ground ginger
1 t. salt
4 t. baking powder
1/2 t. ground cloves
2 eggs
1 T. granulated sugar, preferably brown
Beat eggs with milk and molasses.
Mix dry ingredients together.
Stir dry ingredients with liquids until combined.
Heat a skillet or griddle and drop liquid on it. Wait until the bubbles pop and the edges look like they are drying and flip.
Delicious with butter and maple syrup if you are a traditionalist.
I would guess fruit and fresh cream would also be delicious.
