Zesty Chicken Chorizo Meatballs
Ingredients
- 2 lbs chicken breast (ground)
- 1 lb chorizo (ground)
- 2 tsp canola oil (plus extra for baking sheet)
- 1 cup breadcrumbs
- 1 cup chicken stock
- 1 piece (2 inches) fresh ginger (finely chopped)
- 4 cloves garlic (finely chopped)
- 2 eggs (lightly beaten)
- 2 scallions (chopped)
- Salt & pepper (to taste)
Directions
- Preheat the oven at 400 degrees. Oil a baking sheet.
- Mix breadcrumbs with chicken stock and set aside for 5 minutes.
- Add ginger, garlic, eggs, scallions, cilantro, salt, pepper, and ground chicken to the breadcrumbs and stir.
- With wet hands, shape into 2-inch meatballs, and place on an oiled silicon mat and/or baking sheet .
- Roast for 15 minutes. Turn meatballs and roast for 10 more minutes until browned. Optional: Dip in sour cream & salsa verde.
