Zesty Chicken Chorizo Meatballs

Ingredients

  • 2 lbs chicken breast (ground)
  • 1 lb chorizo (ground)
  • 2 tsp canola oil (plus extra for baking sheet)
  • 1 cup breadcrumbs
  • 1 cup chicken stock
  • 1 piece (2 inches) fresh ginger (finely chopped)
  • 4 cloves garlic (finely chopped)
  • 2 eggs (lightly beaten)
  • 2 scallions (chopped)
  • Salt & pepper (to taste)

Directions

  1. Preheat the oven at 400 degrees. Oil a baking sheet.
  2. Mix breadcrumbs with chicken stock and set aside for 5 minutes.
  3. Add ginger, garlic, eggs, scallions, cilantro, salt, pepper, and ground chicken to the breadcrumbs and stir.
  4. With wet hands, shape into 2-inch meatballs, and place on an oiled silicon mat and/or baking sheet .
  5. Roast for 15 minutes. Turn meatballs and roast for 10 more minutes until browned. Optional: Dip in sour cream & salsa verde.
