Buttermillk Pancakes
Best pancakes ever – gives you a reason to stay in on a weekend. The secret to keeping these cakes super fluffy is to *not* overmix the wet and dry ingredients! These also freeze very well – make a double recipie (I have one friend who triples it, but she’s nuts…) and freeze the rest for weekday pancake happiness.
1 cup flour
1 and 1/4 tsp baking powder
3 T sugar
1/4 tsp salt
1 cup buttermilk
1 egg
3 T butter, melted
Not hard at all – mix the dry ingredients together and in a seperate bowl, mix the wet. Then combine but don’t overmix.
Bake on a hot griddle – flip a little before all the bubbles set and bake the other side.
