Chipotle Macaroni and Cheese
1 1/2 tbsp. Flour
1 cup 1% Milk
1 cup Macaroni (un-cooked)
1 tbsp. parmesan (fresh)
1/2 cup cheddar cheese (shredded)
1/4 cup pepper monterey jack (shredded)
1/4 cup onion (chopped)
1 chipotle chilies (chopped)
1/4 tsp. salt
1 plum tomato (diced)
1 tbsp. bread crumbs
1 tbsp. Dijon mustard
Cook macaroni for 5 minutes. Drain and set aside.
Spoon flour into sauce pan. Add milk slowly, stirring with whisk. Heat and stir over medium heat until thickened. (About 3 min.) Stir in cheeses, onion, mustard, salt, chipotle and stir for about 2 min.
Sitr together macaroni, cheese sauce, and tomatoes. Spoon into casserole dish. Top with breadcrumbs and some parmesan cheese. Cook at 375 for 20 minutes.
