Easiest Chicken Stew Ever
Ingredients:
- 1 28 oz can crushed tomatoes
- 2-3 peeled fresh whole tomatoes, cut up
- 1 28 oz can great white northern beans
- 4 cups chicken broth
- 1 cup kale, chopped (could substitute spinach)
- 1 14 oz can sliced olives
- 2-3 cooked, cubed boneless chicken breasts
Directions:
Combine all and simmer for 30 minutes to an hour. Serve over mock alfredo pasta (recipe below), rice or quinoa.
Mock Alfredo Pasta:
- 1 16 oz package pasta of your choice
- About 1/2 cup light cream or half and half
- About 1/2 cup parmesan cheese
- Dash salt
- Dash white pepper
- 1/3 stick butter
Cook pasta according to directions. Add butter first, then cream, followed by rest of ingredients. Combine and serve.
