Hardt & Negri bean stew
“This is E’s recipe. The hearty, spicy stew is best enjoyed while reading “Empire” by Michael Hardt and Antonio Negri, which, in the spirit of the Reciplex, is described by its publisher (the Harvard Press) as “the new Communist Manifesto”. If you dont eat scallops, though…Well, “Empire” can be consumed without stew. The authors might even urge you to steal the book; after all, Mr. Negri is in prison. I would do both, but I’m on Reciplex detail.”
1 lb. medium size scallops
1 can black beans
1 can black eyed peas
2 cans of diced tomatoes, preferably with jalapeno
still more jalapeno, depending on desired spiciness
1 cup chopped celery
1/2 cup cilantro
1 cup onion
garlic to taste
paprika to taste
cajun spice to taste
Saute onion and garlic for a few minutes. Add celery, saute a few more. If you want, add green or red peppers.
Add tomatoes and let simmer for ten minutes. Add the jalepeno, cajun spice and/or the paprika and the canned beans. Let simmer for another ten minutes or so.
You can simmer this for as long as you want, but five minutes before you’re done simmering, add the scallops to cook them through. Scallops are rubbery when overcooked, so avoid that.
Mix in the cilantro and serve hot, over rice.
