Kickass Turkey Burgers

Lets face it: sometimes you just need a little meat. Why not battle that urge with meat shaped poultry, instead of greasy, scary ground beef. Also, this recipe is great in the Foreman Grill if you happen to have it.

Ingredients

  • 1 pounds of ground turkey
  • half a large onion (diced) or green onion
  • 5 cloves of garlic (minced)
  • 2 jalapeƱos (optional)
  • cilantro
  • 1 tbsp bread crumbs
  • Spice Mix: 1 tsp of salt, 1/2 tsp of pepper, 1 tsp cumin, 1 tsp of smoked paprika

Instructions

  1. Place defrosted ground turkey in a large bowl.
  2. Dump the diced onion, garlic, and jalapeƱos in the bowl.
  3. Shred about 10-15 cilantro leaves and dump in bowl.
  4. Season with spice mix
  5. Add bread crumbs. This has little effect on the taste, but makes the patties easier to assemble.
  6. Mix all ingredients with your hands. That’s right, get right in there and SQUEEZE that turkey meat. Get in touch with your inner Nugent until the ingredients are mixed.
  7. Pat the meat and make patties. That amount of meat should make about 5 solid patties, but you can do them any way you want. Do try to avoid patties that are too large and won’t cook evenly. I think the perfect patty is about the size of the palm of my hand (for what its worth).
  8. Grill the patties. If you have a Foreman Grill, you can cook as many as you can fit in about 7 minutes. Otherwise, a grill pan will do.
  9. The best part: put any patties left over in a zip lock bag and stuff them in the freezer. That way, you can have ready made burgers next time you face the meat urge.

Scale Notes

I often scale this recipe up to 3lb of ground turkey.  When I do, I leave everything the same except the spice mix, which I increase to: 3 tsp of salt, 1 tsp of pepper, 2 tsp cumin, 2 tsp of smoked paprika
