Mexican Casserole
This is one of my favorites. During an earlier version of this recipe, I once substituted tempeh for the ground turkey. Make rice on the side and it will serve a lot more people.
1lb ground turkey
3 cloves garlic, diced
1 jalapeno, diced
2 cups salsa
1 15oz can black beans
1/2 bag tortilla chips
2 cups sour cream
1 can black olives
1/2 cup green onions, chopped
1/2 cup chopped tomato
1 cup cheddar cheese, shredded
Preheat oven to 350, grease casserole dish
Cook ground turkey, jalapeno, and garlic over medium-high heat until meat is no longer pink.
Stir in salsa and simmer for 10 minutes.
Stir in beans until heated
Cover bottom of casserole dish with crushed tortilla chips.
Spread meat & beans mixture over chips.
Spread sour cream over the meat & beans.
Layer cheese, tomato, green onions, and olives over the sour cream.
Back in oven for 30-40 minutes, until casserole is bubbling.
