Spinach Rice
A Danard original. So I’m not too sure about these exact-looking measurements. Maybe someone will try it and tell me how it worked out.
3 cup water
1/2 cup rice
1 cube chicken or vegetable broth
3/4 can spinach (chopped)
1 tomato (fresh)
1 onion (fresh)
4 garlic clove (diced)
1/2 tsp. curry powder
1 tsp. red pepper
1 tsp. white pepper
1 tsp. cumin
1 dash adobo
Sautee onions in garlic in some olive oil until they brown a little. Add a couple more drops of oil and stir the rice around in the onions, garlic, and oil for a minute. Add the spinach, tomato, spices, stir. Add the water and crumble the chicken cube into it. Stir and boil for 10 min. Cover, reduce heat, and simmer until the rice is cooked through.
