Dana’s Breakfast Casserole (a.k.a. "Egg Thing")
The people have truly clamored for the secrets of “Egg Thing.” It is also great as a vegetarian recipe – I use mushrooms or veggie sausages as the first layer. Others have used broccoli! *shudder*
6 eggs
splash of milk
1 tsp mustard powder
pinches of spices: salt, pepper, oregano, cayenne, cilantro
1 pkg Li’l Smokies, sliced (or vegetarian sausages)
1 carton mushrooms, sliced
1 onion, chopped
1/2 loaf french bread, cut in cubes
1/2 lb cheddar cheese, grated
Grease a large casserole dish with butter.
Sautee the li’l snausage slices and distribute evenly in the bottom of the casserole dish.
Sautee the mushrooms and onions in the sausage grease and layer them on top of the sausages.
Grate the cheese layer over everything else
In a seperate bowl beat the eggs with the milk and spices, add the bread cubes to the egg mixture
Pour the egg/bread mixture over the cheese layer, distribute evenly
Chill the casserole overnight
Bake without lid on 375 degrees for 1 hour
*Note: Lots of spices make this thing good! Sometimes I sprinke some cheese on top of the bread too. Multiple cheese layers…Mmmm.
