Shrimp & Mango Rice
Maybe you could add ginger or garlic or soy sauce or lemongrass or coconut milk!
1 lb medium-sized shrimp
1 small red onion, diced
1/2 c chopped cilantro
1 mango, diced
1/2 cup peanuts, chopped
fish sauce about 1 teaspoon
2 cups steamed white rice, preferably jasmine
olive oil
juice of one lime
salt & pepper
Peel and devein shrimp. Ew.
Sautee shrimp for a few minutes in olive oil. Add half of the lime juice when done cooking.
Add to rice, along with the rest of the ingredients.
Stir it up real good.
