1/2 c milk
1/2 c flour
1/4 c sugar
2 T butter
fresh fruit or preserves
powdered sugar to taste
Preheat oven to 350 degrees.
Mix flour and sugar. Whisk eggs into milk and then into dry ingredients until smooth.
Melt butter over low to medium heat in ovenproof pan (cast iron preferred) and coat sides.
Pour mixture into pan, let cook over medium heat for one minute.
Transfer pan into oven and let cook 9-12 minutes or until pancake is sufficiently poofed and golden brown.
Remove and serve immediately with fruit. Sprinkle powdered sugar gleefully as desired.
